South Dakota is a mecca for hunting, and game is generally better prepared in SoDak restaurants than you’ll find in other states. But the statewide obsession is Chislic, seasoned, deep-fried beef cubes that are the unofficial state appetizer. They’re equally at home on a dive bar chalkboard as they are in fine dining establishments, and though they’re nothing novel, they’re the cornerstone of South Dakota cuisine.
