Jambalaya
Many a Cajun will tell you Louisiana has the best food in America, and after a few days in New Orleans, it’s hard to argue. So picking one dish to represent the whole state is nearly impossible. Jambalaya, however, is nearly synonymous with Louisiana cooking, a spicy seafood and rice dish created when the Spanish made paella with tomatoes instead of saffron. You’d be hard-pressed to find a restaurant in New Orleans that doesn’t serve it, and even though the city is teeming with creative chefs doing all sorts of cool things, you’ve gotta try jambalaya at least once.
