Back in 1996, the New Mexico State Legislature made its state the first with an official state question: Red or Green? It’s not a question of your preferred Christmas color, but rather of your favorite type of chile. New Mexico takes pride in its chiles, so much so you’ll spot them on license plates and smell them roasting in the air during the fall. Lots of dishes around the Land of Enchantment are smothered in chile, but the best is the classic green chile cheeseburger. It’s the quintessential bar meal all over the state, and you’ll get a funny look if you order a cheeseburger without chiles on top.
