Colorado Green Chili

Not to be confused with the Mexican standard Chile Colorado, Colorado Green Chile is a savory, spicy mixture of green Pueblo chiles, tomatillos, and tomatoes unique to the southwestern part of the state. You’ll typically find it served over stewed pork bites, though bowls of the stuff are on menus all over Colorado, often accompanied by flour tortillas.
