In case you’ve never listened to a single blues song, Mississippi in the early 20th century was poor. How poor? To make their meat stretch a little further, Mississippians created a hamburger patty mixed with flour, eggs, and milk, dubbing it the “dough burger.” A local favorite in Tupelo, it remains a small but telling piece of the region’s culinary history.
