Stuffies

New England slang is fun, isn’t it? In the Ocean State, they call their take on stuffed clams “Stuffies.” The Rhode Island variation uses quahog clams - a name you may recognize as the hometown of the state’s most famous cartoon family. The clam meat is chopped up and mixed with peppers, celery, spices, and parmesan cheese, stuffed back into the clam shells, then baked.
